Taiwanese Entrepreneur Develops Exquisite Western Cuisine Sauces, Meets Food Safety Standards

【新唐人亞太台 2019 年 05 月 24 日訊】Some people say that the sauce is the soul of a dish, it enhances the flavor of delicious food, but modern people prefer natural flavors, pay more attention to food safety. A distinguished 30 years experienced western cuisine entrepreneur from Taiwan, with strict self-discipline, avoided the waves of food-safety violation storm, for the first time he demonstrated publicly the production process. Let’s follow our lens, and discover the secrets. 

Chef: “Good, already poached." 

Fresh and rich oyster with sweet pepper, radish and shallot, toped with black pepper sauce, squeaking sound and strong pepper scent emitted from Teppanyaki; and seafood spaghetti stir-fried with Italian-style sauce, a table of cuisine is prepared with a little time; simple and both the color and flavor are great, the secret lies with these sauces, the little helper.

“That is the top quality black pepper from Malaysia, you can see that it is free from impurities”. 

Grain full of black pepper beans, slip from the palm, did not leave a small chip, the producer uses nation’s best quality black pepper, to make black pepper sauce. And also other mixed cooking ingredients, such as carrots, celery and so forth, selected from Taiwanese farm produce, after cleaning, chopped, mixed all the ingredients and then processed, using 95ºC high temperature cooking and mixing, so that the sweetness of the produce and black pepper, may blend together.

“Natural black pepper beans, as well as our celery, carrots, onions and some garlic, there are also some other spices prepared together to make it; so we will not go to the extent of adding some artificial additives, because these original ingredients, during cooking process will be able to release their delicious favors, so we do not need to add any more to it." 

Adhere to the natural flavor of ingredients, the producer also demands production environment cleanness, bright and tidy plant, the staff in the whole production process, must wear dust-proof clothing and wear masks, and canned products are placed into high pressured sterilizing machine, a few hours later, these canned food, have to pass insulation test, the general standard is kept at 37ºC for 10 days, the producer increased the standard to 45ºC for 14 days.

“Raise the temperature with the extension of days, mainly because our business associated with exports, so we are hoping to imitate the situation inside a container, ultimately ensuring our products are problem free”.

“Testing for any Escherichia coli groups, the E. coli detection results are all negative, not detected at all”. 

The company mainly produces food sauces for cuisine, group meals are the bulk sources, accumulated more than 30 years of professional experience in food industry and hygienic qualification in production equipment, coupled with strict self-discipline, so they were able to avoid the waves of food-safety violation storm. For now, the second generation successor Roy Yang, also working in his father, Yang Ding Hong founded company. He is now 28 years old, during childhood he witnessed his father's career, talking about succession, Roy Yang said, it’s more like an inheritance .

“I think it is a kind of spiritual inheritance. From primary school, until I graduated from college, winter and summer vacations means helping at home, so from a child seeing my parents working with bare hands from scratch, until what we got today, slowly established the value of this brand, therefore I think I should not say taking over my father’s career, but continuing the spirit of inheritance from my parents." 

In addition to the company’s well know black Pepper Sauce, Mushroom Sauce and Italian Sauce, there are other series, adding up to more than 20 products. The products reached North America, China and Japan markets, and won the local food safety certifications. They will continue to research and develop new taste products, and present the wonderful combination of Chinese and Western flavors, fulfill the taste buds of food lovers from different parts of the world.
